Publicado en 1895, este libro es el resultado de una exhaustiva investigación de campo realizada por el autor con el fin de rescatar los proverbios judíos en español más importantes y significativos. Más que una mera curiosidad bibliográfica para eruditos, se trata de una obra imprescindible para comprender el origen de un buen número de refranes españoles. El ladino o judeo-español, una lengua que se ha mantenido viva durante más de cinco siglos a pesar de haber experimentado algunas variaciones, nos permite disfrutar del idioma que se hablaba en España antes de la Expulsión. Raimundo Foulché-Delbosc (Toulouse, 1864-París, 1929), uno de los hispanistas franceses más importantes de todos los tiempos, fundó y dirigió la Revue Hispanique (1894-1933) y creó la colección «Biblioteca hispánica» (1897). Foulché-Delbosc recorrió España, el norte de África y Oriente Próximo recopilando canciones, romances y proverbios en ladino. Es autor, entre otras obras, de la Bibliografía de Góngora (1908) y de una edición del Cancionero castellano del s. xv (1912-1915).

Ό,τι σοφό και ωραίο έχει πει ο λαός μας, στο μακρύ διάβα του χρόνου, είναι αποθησαυρισμένο στο βιβλιο αυτό, με τις 17.000 ελληνικές παροιμίες που περιέχει. Σίγουρα, οι παροιμίες είναι η λαμπικαρισμένη πείρα των απλών, αλλά φωτισμένων ανθρώπων του λαού, που μέσα σε απλά και λίγα λόγια ως «σφυρήλατος λόγος εν μικρώ όγκω», όπως λέει ο φιλόσοφος Αριστοτέλης, περικλείουν σοφά διδάγματα για όλες τις πράξεις και τις σκέψεις του ανθρώπου. Με επιμονή και υπομονή μέλισσας τρυγήθηκε επί τρία ολόκληρα χρόνια το νέκταρ χιλιάδων πνευματικών λουλουδιών, για να συγκεντρωθεί το υλικό αυτό, που φωτίζει τον δρόμο της ζωής του ανθρώπου, τον καθοδηγεί, τον φρονηματίζει και διδάσκει μεγάλες αλήθειες για το ορθό, το δίκαιο, το μεγάλο και το αληθινό, που για χάρη τους αξίζει να αγωνίζεται ο άνθρωπος, σύμφωνα, πάντα, με τις ηθικές αρχές του λαού μας. Μελετώντας ο καθένας τις παροιμίες αυτές, αποκτά πλούτο καθοδηγητικών γνώσεων, που θα τον φωτίζουν, θα τον διαφωτίζουν και θα τον βοηθούν να βλέπει με καθαρότερο μάτι τη ζωή. Για να είναι ευκολότερη η χρήση όλου αυτού του πλουσιότατου υλικού, είναι ταξινομημένο σε 870 θεματικές ενότητες, κατ' αλφαβητική σειρά, ώστε να μπορεί ο καθένας να βρίσκει ευκολότερα το θέμα των παροιμιών που τον ενδιαφέρει.
